Tapioca Pearls Tapioca is a starch obtained from the root of the cassava or yuca. Cassava is a plant native to South America and the West Indies, where its thick, fibrous roots are used in a variety of forms – as flour for baking, for making beer and, of course, tapioca pudding. Tapioca is also suitable for thickening soups or sauces. It is also used to make bubble tea.
